I love bacon. I love cheese. I love muffins. When I had all three of those together on Saturday morning I realised a life goal: to melt cheese on bacon. Incredibly fattening, but good grief it tasted good.
I used up the rest of the Tesco’s Finest thick-cut smoked bacon that I used in the Breast Test for the Saint Agur. That bacon is simply divine.
Yum. This is my ultimate deserted island, final meal before I die.

Thanks. Next on the bucket list is “pig in a bun”: bacon, streaky bacon, ham, sausage, pulled pork, chorizo and hamburger between chunky bread.

I just made this for my breakfast thanks to you. I substituted “wheat” muffins to make me feel better about eating it. Lol!
How was it? And what are wheat muffins? Prefer them to regular?
It was delicious. We have regular white flour English Muffins and whole grain wheat flour made ones. The ones I like are made by Vermont Bread Company and they are all natural, made without high fructose corn syrup, chemical additives, artificial ingredients, or white sugar (good for the kid). They are very good and add a little sweetness to the sandwich……yea, just add the BACON & CHEESE already!! ๐

What cheese did you use? I love brie with bacon.
I just used a mature cheddar, but I do love Brie and bacon, particularly in a panino!
