This is my favourite flavour combination ever, and a dish I make if we have guests round. I’ve made it a few times recently for friends and it always seems to have gone down a treat. Boursin-stuffed Chicken, wrapped in Bacon. I’ve never followed a recipe for this, so the following might seem a tad ramshackle, but it’s a cracking meal. If you don’t like Boursin (it’s a soft garlic cheese) then this is also great if you substitute the cheese for red pepper pesto.
- 1 chicken breast per person
- 3 rashers smoked bacon (not streaky bacon) per chicken breast
- Your favourite summer veg. I went for peppers, courgettes and plum tomatoes
What to do
This dish is the most simple, straightforward meal you could possibly make. Take the chicken breast and cut a pocket into the side. Stuff it with Boursin (you might only be able to fit in one or two knife-fulls), then wrap it in bacon so the chicken breast is wrapped all the way round. Lightly grease a baking tray (no need to do the whole thing, only where the meat is going) and slap it in the oven for about 40 minutes. 200 degrees, 180 Fan, or Gas Mark 6. At the same time put in a tray of vegetables to roast, as they should take about the same amount of time.
So, that’s the meal. I can say from experience that it goes very well with this appropriately named bottle of vino!
